In the bountiful, sweeping valley of the river Tweed is a landscape rich in wild game. They thrive in their natural habitat of the hedgerows, fields and woods of the small, traditional farms that are typical of our area. This provides a broad diet including berries (especially from our neighbouring Border Berries fruit!), nuts and arable crops for our roe deer, rabbit, hares, pigeons and game birds to eat. Consequently, Scottish Borders game is among the most highly prized by the world’s most discerning chefs – especially in Paris and Edinburgh where we supply top restaurants.

Much of the pheasant comes from my own farm here at Rutherford Burnside. From other local gamekeepers, I source roe deer venison, partridge, pigeon, rabbit, hare, grouse, mallard and wild duck. I rely on bush telegraph between keepers to bring in a steady supply of this excellent game.

All our game is wild not farmed and therefore supplied fresh to order in season. This ensures its premium flavour and quality that in turn guarantees the most delicious roasts, stews, barbecues or however you decide to enjoy it.
